amaranth
amaranth
The small, almost golden-colored seed balls of amaranth are one of the oldest crops cultivated by humans. It is one of the so-called pseudocereals . Amaranth is a wholesome grain that is particularly well tolerated. Its high iron content is impressive, among other things, and its slightly nutty taste, which develops when cooked, means it is used in more than just muesli . Amaranth is a welcome alternative in vegetable fillings, salads, or deliciously seasoned as a side dish . Its high protein content also sets it apart from conventional grains. Good to know: Amaranth contains many unsaturated fatty acids, and like olive oil, they can support the body in the absorption of fat-soluble vitamins (A, D, E, K) .
