Vegan LA VIDA Vital Salad Asia

- Prepare 8 tablespoons of LA VIDA VitalMixtur (approx. 120 g) as described on the package
- 200 g each of green, yellow and red pepper
- 100 g carrots
- 100 g leek
- 150 ml vegetable stock
- 6 tablespoons olive oil (approx. 60 g)
- 1 cm ginger peeled fresh
- Juice of one lime
- 10 g garlic (approx. 1-2 cloves)
- 5 tbsp soy sauce
- 100 g oyster mushroom salsa

About this dish...
This vegan salad is light and full of flavour, perfect for a healthy meal. Fresh vegetables and a spicy mushroom salsa make it a real treat. Ideal for preparing the next day.

Prepare the LA VIDA VitalMixture (approx. 120 g) as described on the packet and allow to cool. Cut the peppers, carrots and leeks into strips and finely chop the garlic and ginger. Fry everything in a pan with 3 tablespoons of olive oil for a few minutes. Deglaze everything with the vegetable stock. Add the mixture, stir and set aside. Add the lime zest (organic) or alternatively the juice from a concentrate, the soy sauce and the remaining olive oil as well as the mushroom salsa, season with salt and pepper and mix well. If you like, you can sprinkle some sesame seeds over the dish. Garnish with fresh herbs or sprouts.
